COURSE 1 | THE BREAD COVENANT

The Tea: Aged Golden Yunnan Black Tea

Heirloom Grains & Artisanal Fats

Warm, petite Buttermilk Rounds and Sweet Potato "Gold Bar" Cornbread.

Accompanied by: Slow-simmered Apple Butter, Blackstrap Molasses, and Lavender-Infused Honey.

COURSE 2 | THE SUN-DRENCHED PALATE

The Tea: White Peony (Bai Mu Dan) Infused with Fresh Mint

Compressed Cucumber & Hibiscus-Blushed Eggs

Paper-thin ribbons of Cucumis sativus (English Cucumber) compressed in white balsamic and mint, served with Green Apple Gelée and Lemon Verbena oil.

"Heirloom Gold" Deviled Eggs, steeped in a Hibiscus and Beet bloom, filled with turmeric-whipped yolk and topped with a pickled mustard seed.

COURSE 3 | THE FIELD-SIDE POULTRY

The Tea: Toasted Hojicha (Japanese Green Tea)

Benne-Crusted Chicken & Savory Grit Cake

Medallions of Heritage Poultry crusted in toasted Heirloom Benne seeds (Sesame) for a glass-shatter finish.

A pan-seared, sharp cheddar Grit Cake with a "Golden Harvest" crust.

COURSE 4 | THE SOUL IN THE SOIL

The Tea: Lapsang Souchong (Lightly Pine-Smoked Black Tea)

Collard Green "Cigars" & Clear Pot Liquor Consommé

Slow-braised, pot-liquor-rich greens hand-rolled in triple-layered, crisp Phyllo pastry.

 

COURSE 5 | THE GRANDMA’S ORCHARD FINALE

The Tea: "The Rooted Remedy" (Hibiscus, Rosehip & Dried Apple)

A Trio of Botanical Masterpieces

The Cloud: Aerated Banana Pudding Mousse over a deconstructed Nilla wafer crumble and brûléed banana coins.

The Tartlet: Silky Sweet Potato Custard in a micro-shortbread shell with a toasted marshmallow-meringue peak.

The Pillar: A miniature three-tier "Heritage Cake" infused with Hibiscus sabdariffa and Rosehip, finished with botanical cream.

A Note on the Season’s Bounty: To ensure the 5-star integrity of our culinary performance, our curated menu remains fluid, responding to the daily offerings of our local farm partners and the creative vision of our resident chefs. While the specific heirloom pairings may evolve with the season, the 'Soulful Tea' remains a guaranteed Five-Course Narrative Experience of the highest modern standard.
